I live in the New Territories.
And I also used to work at CUHK.

There are lots of 3-storey Spanish style village houses( one apartment per floor @ 700 sq ft,) in the NT.
These would be your best bet. They are nice and quiet, but you need to look around. ( a few available near where I live too - Tai Wo)

You may want to live close to the KCRC train stations at any of the following towns - Tai Wai, Shatin, Fotan, ( University Station), Tai Po Market, Tai Wo.
I have left out 2 other stations after Tai Wo as they are more than 15 minutes away on the train. ( Fanling & Sheung Shui)
Average rental ranges from HK$ 7000 to HK$ 10,000 per month.
There are also some houses near the University, but I personally don't like that area.

Good luck.
